A fire that has never gone out
The wood-fired stone oven at the back of our bakery has been burning, in one form or another, since the day we opened. We feed it cherry and oak. We never let it sleep.
That steady, ancient heat is what gives our breads their crust, our pides their blister, and our börek its golden crackle.
