Forty years later, we still rise before sunrise. The same stone hearth glows. The same recipes are kept by hand. Only the people change.

Every morning, sesame seeds are toasted on copper. Pistachios arrive whole from Gaziantep. Phyllo is rolled paper-thin and brushed with butter, layer after layer, until the light comes through.
